Happy Memorial Day, I can never forget I would not be sitting in my home with my dog, enjoying blogging if our freedoms had not been fought for for hundreds of years by those who just thought it was what they should do. I think brave means you do what is right, not just what you want to.
THANK YOU to all who have served, are serving and to the families at home that share you with this great country.
As I am home enjoying a day off because of these great men and women, I watched Rachel Ray. It was a rerun but as I am not watching TV this time of day, but here was a really cool idea for meat loaf!
Meat and potato cup cakes!!
I love it!!
Now I have recently gone Gluten Free. SOOOO all the regular stuffings for a meat loaf I cannot use. Also I would love to add veggies to this.
Now do I add them to the meat so I have filling for the meat loaf, or stick to onions and seasoning in the meat and add veggies in the potatoes, I am thinking corn, maybe squash, zucchini, even broccoli. I am not a carrot and pea fan
so I really don’t want to add them.
How would you do it. I really like the littleness and cupcakes rock! I really think this would be a great idea what would you do?

ReplyDeletehow stinking cute that is! I've made little chicken pot pies in muffin tins before, but meatloaf is a terrific idea too! If I were to add veggies, Id just add what ever I like to the meatloaf mixture. I'm afraid I'd have to eat 4 of those to be satisfiec! lol!

I know one thing the meatloaf and mashed potatoes look just right to me. My SIL has to have everything gluten free as well. What about rice in your meatloaf with the veggies. I think rice is gluten free. I think you can put just about everything in meatloaf and it will taste good.

You could use GF breadcrumbs...or oatmeal (if you eat that) These are adorable. Glad your Memorial day is so relaxing.
ReplyDeleteReally pleased to see you back Lisa me mate. Hum... you know Veggie's on their own have worked for me for a number of years. Smell of hamburger makes me .... was going to say something, changed my mind. Just say, I hate the smell :-) I'm one of the strange one's that can walk past a McDonalds and think poor souls :-) :-)

I think I'd try shredded zuchhini in the meatloaf... it works for zucchini loaf, why not the meat? They do look yummy!
ReplyDeleteIt's so good to see a post from you Lisa! It's so funny that my husband and I were just talking about going gluten free. One thing I know for sure is that I'm going to have to try that meat and potato cupcake before we do!
ReplyDeleteHi Lisa- I am gluten free, too...you could use breadcrumbs from gluten free bread (I really like Udi's from the freezer section). You could also use gluten free oats or try rice, like previously suggested! Looks delicious!
